Cucumber Salad

Ingredients

4 Cucumbers

1/2 Cup Sour Cream

1 Tbls Lemon Juice

2 Tbls Fresh Dill Weed

Salt to taste

Pepper to taste

Directions

  1. Peel the Cucumbers leaving skin where wanted and cut them into fourths lengthwise and thinly slice those fourths

  2. Mince the dill weed

  3. In a seperate bowls whisk together the dill, sour cream, salt, pepper, and lemon juice

  4. Add the dressing on top of cucumbers and let sit in the fridge for 15 minutes

Sautéed Zucchini

Ingredients

4 Zucchinis

1 Yellow Onion

1 Tbls Olive Oil

2 Tbls Butter

2 Tsp Thyme

Salt to taste

Pepper to taste

Parmesan cheese

Directions

  1. Evenly slice zucchini into 1cm pieces

  2. Peel the Onion and coarsely chop

  3. Place the Olive Oil, 1 Tbls butter, and onion into frying pan and stir with a spatula until onions slightly brown

  4. Add in zucchini, remaining butter, salt, pepper, and thyme and cook until the zucchini is easily fork tender

  5. Add Parmesan cheese as a garnish and enjoy
