Garlic Kale

Ingredients

1 Bunch kale

1 Tbls olive oil

1 Tsp minced garlic

Directions

  1. Soak kale leaves in a large bowl of water for about 2 minutes. Lift kale from the bowl without drying the leaves and remove and discard stems. Chop the kale leaves into 1-inch pieces.

  2. Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, Add kale to the skillet and place a cover over the top.

  3. Cook, stirring occasionally with tongs, until kale is bright green and slightly tender

Carrot Soup

Ingredients

One tbsp butter

One tbsp extra-virgin olive oil

One onion

One stalk celery

Two cloves garlic

One tsp parsley

5 cu chopped carrots

Two cups water

Four cups chicken

Salt & Pepper to taste

Directions

  1. Melt butter and oil over medium heat.

  2. Add onion and celery. Cook until they are soft.

  3. Now add garlic and parsley and cook for around 10 seconds.

  4. Next add the carrots as well as water and broth.

  5. Let it simmer for about 25 minutes.

  6. Puree the soup in a blender until smooth.

  7. Season with salt and pepper.
