Pumpkin Muffins

Ingredients

4 Tbsp butter

2/3 cup brown sugar

2 eggs

1 tsp vanilla

1/3 cup molasses

2/3 cup pumpkin puree

1.5 cups flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp cinnamon

1 tsp ground ginger

Directions

  1. Combine the first six ingredients in a large bowl and stir until well combined.

  2. Add remaining ingredients and stir until just mixed.

  3. Scoop into greased or lined muffin tins.

  4. Bake at 375 degrees for 20-22 minutes

Corn Casserole

Ingredients

8 ears corn, still in the husk

2/3 c. heavy cream

3 tbsp butter

salt to taste

pepper to taste

Directions

  1. Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn. With the dull side of the knife press and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside.

  2. Add heavy cream, salt to taste, a generous amount of ground pepper and butter; mix well.

  3. Pour mixture into a baking dish. Bake at 350Fº for 30 to 45 minutes or until thoroughly warmed through.
